Ingredients
1/2 cup oil
1/2 tsp ground star anise
1/2 tsp ground black pepper
1 lb boneless chicken thigh or breast, cubed
1 tsp chopped garlic
12 dried chilies, deseeded, cut into short lengths
1 tsp finely grated ginger
2 scallions, cut into short lengths
1/4 tsp sesame oil
Sauce:
1 tsp sugar
1 tsp soy sauce
1 tsp black Chinese vinegar
1 tsp rice wine
2 tsp cornstarch
1/3 cup water
Method of preparation Mix sauce ingredients in a small bowl, set aside.
Heat oil in a wok until very hot, stir-fry chicken for about 2
minutes until golden brown.
Remove and drain on paper towels.
Discard all but 1 tablespoon of oil.
Heat reserved oil in wok over medium heat, stir-fry chilies for
about 3 minutes until color changes and begin to smoke.
Immediately remove chilies from wok and set aside.
Add ground spices, garlic and ginger to wok and stir-fry for 1 minute until fragrant.
Add sauce mixture and scallions, stir for 30 seconds then return chicken and
chilies to wok.
Stir-fry for 1 minute, drizzle with sesame oil.
Method of serving
Served warm with cooked rice or noodles.
