Introduction
This time-tested aromatic herbaceous delicacy in Southeast Asia
emanated from workers in Southern China who consumed it to gain energy.
Chik Kut Teh is to substitute pork with chicken, for diners who avoid
pork due to health or religious reasons.

Ingredients
1 1/3 lbs pork ribs, chop into 1-inch pieces
3 cloves garlic, lightly cruched
1 cinnamon stick
2 cloves
1 star anise
1/2 tsp black peppercorns
2 tsp salt
1 tbsp black soy sauce
6 cups water
Condiment:
1/4 cup light soy sauce
1 red chili
Method of preparation Boil ingredients in a covered large pot.
Reduce heat and simmer on low heat until pork is tender.
Add more boiling water as needed.
Slice chili into thin strips, portion into 4 small dishes.
Pour light soy sauce into the dishes.
Divide pork ribs and soup into 4 serving bowls with condiment on the
side.
Method of serving
Served warm as is or with cooked rice or noodles.
