Tomato Soup Vermicelli with Spicy Meatballs Recipe
 

Introduction
A complete meal by itself, one may opt to add vegetables as desired.

Serving size: 4
Preparation time: 30 minutes

Ingredients
1 lb ground beef
1 cup mashed potato
2 tsp sambal paste
1 tbsp light soy sauce
1 tbsp ground cilantro
1 tsp ground cumin
1 tsp ground cardamom
1/2 tsp ground nutmeg
1 egg, lightly beaten
3/4 cup peanut oil
3 1/2 oz vermicelli

Tomato soup:
12 oz can tomatoes, crushed
1 cup water
1 red onion, chopped
2 cloves garlic, crushed
1 tbsp light soy sauce

Method of preparation
Combine beef in a bowl with potato, sambal paste, soy sauce, cilantro, cumin, cardamom, nutmeg and egg.
Shape mixture into balls.

Heat oil in a frying pan, add meatballs in a single layer, fry on all sides, over medium heat until cooked through. Drain on absorbent paper.

Tomato soup:
Combine undrained, crushed tomatoes, water, onion, garlic and soy sauce in a pan, bring to boil.
Reduce heat to low then simmer uncovered for 10 minutes.

Add vermicelli, simmer for 3 minutes, or until vermicelli is soft.

Method of serving
Served warm as main dish.
