Fish in Sour Soup Recipe
 

Introduction
Let this pungent and sour dish of fish soup wake your senses and lead you into a delectable dining experience.

Serving size: 4
Preparation time: 30 minutes

Ingredients
1 medium-size herring
1/2 cup tamarind juice
1/2" ginger
1 stalk lemon grass
2 red chilies, diagonally sliced
2 bay leaves
1 1/2 cups water
3 small star fruits, sliced
1 red tomato, sliced, to garnish
Sprigs of cilantro leaves, to garnish

Blend:
4 shallots
3 cloves garlic
1/2" turmeric
Salt and sugar to taste

Method of preparation
Soak herring in tamarind juice with salt, wash thoroughly, cut into four parts.

Fry blend ingredients in a pan until fragrant.
Add chilies, ginger, lemon grass and bay leaves, cook until dry.
Pour water then add star fruits, stir well and leave to boil.
Add fish, stir occasionally until cooked.

Transfer into serving dish, garnish with tomato slices and cilantro leaves.

Method of serving
Served warm, with cooked rice or noodles.
