Ingredients
8 chicken drumsticks, skin and fat removed
1
red onion, chopped
1 pineapple, cut into 1" cubes
2 tbsp peanut oil
1 tsp grated ginger
1 clove garlic, crushed
2 red chilies, sliced into thin rings
1/3 cup coconut milk
1/2 cup water
Method of preparation Heat oil in frying pan, add chicken and onion, fry on all sides until brown.
Add pineapple, toss for 1 minute.
Add ginger, garlic and red chili, fry for 1 minute.
Pour in coconut milk and water, bring to boil.
Reduce heat to low, cover and simmer for 30 minutes, stir occasionally until the chicken is tender.
Method of serving
Served warm with cooked rice or noodles.
