Method of preparation Rub salt and cornstarch into shrimps to clean, rinse under
running tap until water runs clear.
Pat dry, cut into small pieces.
Mix seasoning ingredients, add half to shrimp in a bowl.
Stir together with chopped cilantro leaves and scallions.
Break eggs into a mixing bowl, whisk in remaining seasoning
ingredients.
Add shrimps and stir until evenly mixed.
Heat a wok, add oil and shallow fry tablespoons of omelet mixture
until both sides are golden brown.
Remove patties, keep warm.
Garnish with extra cilantro leaves.
Method of serving
Served warm with cooked rice or noodles.
