Acharang Labanos (Pickled Radish and Carrot) Recipe
Introduction
A sour-sweet Filipino relish made of radish and carrot to perk up your
dining pleasure.
Serving size: 2 cups
Preparation time: 30 minutes + a few hours soaking
Ingredients
3 white radish (about 13 oz), peeled, cut into paper-thin round slices
3/4 cup coarse salt
1 1/2 cups fine granulated sugar
1 cup white vinegar
2 carrots, peeled, cut into paper-thin round slices
Method of preparation Mashed white radish into coarse salt, set aside for a few
hours.
Rinse radish slices in water to remove all salt.
Squeeze out all water, set aside.
Combine sugar and vinegar in a saucepan and stir to combine.
Simmer over low heat for about 3 minutes until mixture becomes clear.
Add radish and carrots, simmer for about 5 minutes.
Remove from heat, transfer radish and carrot to a clean bowl.
Pour in a little of vinegar-sugar syrup.
Let cool, store in a covered container.
Keep refrigerated.
Method of serving
Serve as relish for fried fish, chicken and barbecues.
