Chilled Soba Noodles Recipe
 

Introduction
This easily prepared dish of chilled noodles with light dressing is simply irresistible amidst the heat of summer weather in Japan.

Preparation time: 15 minutes

Ingredients
1 1/4 cups dashi broth
2/3 cup mirin
4 tbsp shoyu sauce
5 oz soba noodles
1 tbsp sesame oil

Method of preparation
Bring a pot of water to boil, for cooking soba.
Combine dashi, mirin and shoyu in a small pan, bring to boil then leave to cool.
Stir soba slowly into the boiling pot of water, keep stirring while boiling for 5 minutes.
Rinse soba under cold running water then drain well.
Mix with the sesame oil and toss gently.

Method of serving
Traditionally served in a bamboo box, with dipping sauce in separate small bowl; may garnish with strips of seaweeds and ice cubes to enhance the chilling effect.
