Method of preparation Bring a pot of water to boil, for cooking soba.
Combine dashi, mirin and shoyu in a small pan, bring to boil then leave
to cool.
Stir soba slowly into the boiling pot of water, keep stirring while
boiling for 5 minutes.
Rinse soba under cold running water then drain well.
Mix with the sesame oil and toss gently.
Method of serving
Traditionally served in a bamboo box, with dipping sauce in separate
small bowl; may garnish with strips of seaweeds and ice cubes to enhance
the chilling effect.
