Grated Coconut Candy Recipe
 

Introduction
Round off your meal with this irresistible sweet slices of grated coconut as dessert.

Serving size: 12 pieces
Preparation time: 55 minutes

Ingredients
1/2 cup evaporated milk
1/4 cup sweetened condensed milk
2 cups sugar
1 tsp cardamom powder
5 cups freshly grated coconut
1 tbsp butter
1/4 tsp salt
2 drops food coloring (optional)
8-in baking tray, lightly greased with melted butter

Method of preparation
Combine evaporated milk, condensed milk and sugar in a saucepan, cook over very low heat for about 10 minutes.
Stir frequently until sugar is dissolved, remove from heat.

Add cardamom powder, grated coconut, butter, salt and food coloring (if using) to milk mixture.
Cook over low heat, stir constantly for about 25 minutes until mixture is almost dry, remove from heat.

Press cooked candy firmly into greased baking tray and set aside to cool.
Slice candy into squares or diamonds before it completely hardens.
Allow to cool thoroughly before storing in airtight container.

Method of serving
Served chilled or at room temperature.
