Ingredients
8 lamb chops (about 2 lbs in total), fat trimmed off
9 cloves garlic, crushed to make 3 tbsp paste
2 in ginger, peeled and coarsely grated
2 red tomatoes, blanched, peeled and diced
2 onions, diced
1 tbsp meat chili powder
1 1/2 tsp salt
2 cups yogurt
1 1/2 tsp cumin seeds
2 tsp garam masala
3 tbsp lime juice
3 stalks cilantro leaves, chopped
Method of preparation Place lamb chops, garlic, ginger, tomato, onion, chili powder,
salt and yogurt in a large saucepan.
Bring to boil over medium heat then reduce heat to low and cook covered
for 30 minutes until meat is tender.
Dry-fry curnin seeds in a skillet over low heat, stir constantly, for
5 minutes until fragrant.
Remove from heat and set aside to cool then grind to a coarse powder.
Add ground cumin, garam masala, lime juice and cilantro leaves to
meat.
Cook uncovered for 5 more minutes until sauce is thick.
Remove from heat, transfer to a serving dish.
Method of serving
Served warm with steamed rice or bread.
