Glassy Shrimp Balls Recipe
 

Introduction
An Asian presentation of distinctive Chinese recipe with springy shrimps "decolored" by the baking soda presented as white balls doused in tasty seasoning and lightly shredded spicy ingredients.

Serving size: 6
Preparation time: 15 minutes + 3 hours soaking

Ingredients
6 shrimps (about 2/3 lb), shelled
2 tsp baking soda
1 cup water
1 tbsp shredded ginger
2 tbsp shredded scallion
1 tbsp shredded red chili

Seasoning:
3/4 tsp salt
1/2 tsp MSG
1/4 tsp sugar
3 tbsp water
1 tsp cornstarch

Method of preparation
Devein shrimps and remove all pink outer skin.
Drain then soak in baking soda and water for 2 hours.
Remove and rinse thoroughly to rid shrimps of any baking soda.
Place shrimps in fresh water to cover and let soak for 1 hour, drain.

Boil 5 cups water and cook shrimps for 1 1/2 minutes, remove and drain.

Place ginger, scallion and chili on serving plate, bring seasoning to boil in a pan without oil.
Add shrimps, when mixture has thickened, pour over ingredients on serving plate, toss lightly.

Method of serving
Served warm with cooked rice or noodles.
