Introduction
An Asian presentation of distinctive Chinese recipe with springy shrimps "decolored" by the baking soda presented as white
balls doused in tasty seasoning and lightly shredded spicy ingredients.
Ingredients
6 shrimps (about 2/3 lb), shelled
2 tsp baking soda
1 cup water
1 tbsp shredded ginger
2 tbsp shredded scallion
1 tbsp shredded red chili
Seasoning:
3/4 tsp salt
1/2 tsp MSG
1/4 tsp sugar
3 tbsp water
1 tsp cornstarch
Method of preparation Devein shrimps and remove all pink outer skin.
Drain then soak in baking soda and water for 2 hours.
Remove and rinse thoroughly to rid shrimps of any baking soda.
Place shrimps in fresh water to cover and let soak for 1 hour, drain.
Boil 5 cups water and cook shrimps for 1 1/2 minutes, remove and
drain.
Place ginger, scallion and chili on serving plate, bring seasoning to
boil in a pan without oil.
Add shrimps, when mixture has thickened, pour over ingredients on
serving plate, toss lightly.
Method of serving
Served warm with cooked rice or noodles.
