Red Bean Paste Alkaline Dumpling Recipe
 

Introduction
A mouthwatering dumpling with red bean paste filling, a sweet treat to cheer everyone not only during the festive celebration but at all time.

Serving size: 10-15 pcs
Preparation time: 3 hours + overnight soaking

Ingredients
Rice:
1 lb glutinous rice, soaked overnight, drained
1 1/2 tbsp alkaline water
4 tbsp cooking oil

Filling:
6 oz red bean, soaked overnight

Wrapper:
Boil to soften then clean following items~
6 oz dried bamboo leaves
Hemp strings

Method of preparation
Mix rice with alkaline water and oil, stir well, set aside for 30 minutes.
Add red bean, stir gently to mix well.

Overlap 2 pieces of bamboo leaves, fold into cone shape.
Fill 3/4 full with rice and red bean, wrap carefully then secure with hemp string.
Repeat process until all ingredients are used up.

Put dumplings into boiling water, boil for 2 hours.
Remove from sauce pan and let cool before serving.

Method of serving
Served with brown sugar syrup, kaya (coconut milk egg jam), or as desired.
