Chicken and Ginseng Soup Recipe

Ingredients
1/2 chicken (about 1 lb), skin and fat discarded
10 oz lean pork
2 tbsp sliced American ginseng
3 dried seedless red dates, washed
1 small piece ginger, lightly smashed
8 cups water
1 tsp salt

Method of preparation
Blanch chicken in a pot of boiling water for 2 minutes, rinse and drain.
Blanch the pork the same way.

Place all ingredients (except salt) in a pot, bring to boil.
Lower heat and simmer for 2 hours, add salt.

Method of serving
Served warm with cooked rice or noodles.
