Introduction

this wonderful Asian dish of Chinese origin. Ingredients are not many but take note of the long
preparation time...

Ingredients
3 oz black eye bean
3 oz dried oyster
1/4 oz fatt choy
10 red dates
1 slice ginger
1 slice dried tangerine peel
12 cups water
Salt to taste
Method of preparation Soak black eye bean for 10 minutes, wash and drain.
Wash and soak dried oyster for 30 minutes, set aside water for further
use.
Soak and wash fatt choy, add dash of oil and stir well, rinse in hot water for a while
then drain.
Remove stones from red dates, wash and drain.
Soak and wash dried tangerine peel.
Boil water together with dried tangerine peel.
Add black eye bean, dried oyster, water from dried oysters, red dates and ginger.
Boil for 2 hours, add in fatt choy, boil for another 1/2 hour, add
seasoning.
Method of serving
Served warm with cooked rice or noodles.
